Birthday Fruit Kabobs

In just one more day I'm going to have a FIVE year old to contend with!!

With that in mind today's snack was birthday themed.  Princess Birthday Fruit Kabobs...


Now, to be clear, Kai ASKED for fruit kabobs.  She loves them.  I'm not that "crazy mom" who's denying her kid cake.  PLUS we will have cupcakes on her actual birthday. So no judgement. :)

Fruit kabobs are pretty streight forward.  You cut bite size pieces of fruit and then string them onto a bamboo skewer.

To make them extra special I also bought princess crown toppers and ended the kabobs with heart apples.  To make the heart apples I sliced an apple vertically and then used a small apple cookie cutter.  There was a bit of left over but that was easily eaten while assembling the kabobs... or you could nuke it with a bit of cinnamon for a quick snack. :)

Once the hearts were cut out I stirred them with some lime juice to keep them from browning. :)

And there you have it.... Happy Birthday Princess Fruit Kabobs!

Breakfast yesterday was oatmeal...again!  1/3 Cup Oatmeal, 1/3 Cup Almond Milk, 1/3 Cup Water, PB2, Carob Powder, Stevia, Chia Seeds & flax seeds...

Then topped with some frozen banana and raisins.  Kai and I both enjoyed our bowls. :)

Lunch was black bean soup topped with some sweet pepper, avocado and chip crumbs. 

And then dinner was 1/2 Cous-cous, 1/2 Quinoa, Broccoli and Okra.  It's 2 parts water to 1 part Cous-Cous/Quiona plus the frozen veggies, brought to a simmer and cooked until the water's all absorbed. 

Again, Kai and I loved our bowls. :)
